What is Kinilaw?

Fresh tuna from General Santos City is the perfect meat for a special home-made kinilaw. Geographically located southeast of Manila and Cebu, and southwest of Davao, the urbanized General Santos City is the tuna capital of the Philippines and hometown of the boxing champ Manny Pacquiao.

Every September, the city celebrates the Tuna Festival to give thanks for the abundance of tuna from its seas and the thriving tuna industry of the city. Tuna is one of the country's pride for export. In General Santos, the locals take pride in their giant tuna harvests.

Tuna makes an excellent dish for kinilaw or kilawin that most Filipinos love. It is a fish salad served as an appetizer dish. The raw tuna fish is cut in cubes, bathed in vinegar and pampered with generous sprinkles of spices, lemon, cucumber. There may be different ways of preparing this dish but the traditional preparation requires fish meat, vinegar, ginger, onion, black pepper and chili peppers.
